IN THE CELLAR
Vinification, fermentation – maturation: soft mechanical pressing and cleaning of the must by cold static decanting. Sparkling making using the charmat method with the use of small capacity autoclaves with selected yeasts and at controlled temperature. Aged on Lees for several months. Bottling and resting in bottles for a few weeks before trading.
Alcohol: 11,5% vol
IN THE GLASS
Tasting notes: bright straw yellow with elegant and persistent perlage. Notes of fresh fruit, green apple, jasmine white flowers and a hint of spices on the nose. Fresh and mineral on the palate, harmonious and balanced.
Serving temperature: 7-9° C
Pairing suggestion: perfect for social occasions, aperitifs, seafood, white meat or vegan dishes.
